Recipe: Sun Tea

Sun Tea

In a clean glass jar, put some herbs and edible flowers from your garden or local growers. Add filtered water, a lid, and shake a couple of times. Place the jar in a sunny spot for 4-8 hours, and wait for the sun to infuse your desired flavor and sun energy into the water. Serve warm or cold with ice.

We often use mint, lemon balm, raspberry leaf, lavender, cedar, rosemary, calendula, camomile, borage, etc. We also like to add some slices of lemons or cucumber for the extra flavor. Try different combinations of herbs or different lengths of infusion. It's a fun game to guess all herbs in the tea.
